
Easy Pepsi Holiday Recipes: Pepsi Snow-Dusted Fudge and Pepsi Peppermint Bark

This year’s holiday season deserves a little extra merriness and brightness. Good thing it’s easy to add cheer to your family time at home with festive desserts.

Ingredients:
1 can Pepsi
2 cups dark chocolate chips
1 cup milk chocolate chips
4 tbsp butter
2 oz sweetened condensed milk
Salt
Confectioners’ sugar
Make it:
Line an 8x8 inch pan with parchment paper. Add the chocolate, condensed milk, butter and a dash of salt to a big, microwave-safe bowl and cover with plastic wrap. Microwave for a minute and remove the bowl to stir the mixture. Microwave for 30 seconds and remove the bowl to stir. Continue to microwave and stir every 30 seconds until the mixture is fully melted and smooth when stirring – it should take about five minutes.
Add a splash of Pepsi and stir once more until blended. Pour your fudge into the pan and use a spatula to smooth the top. Place in the refrigerator to cool for about two hours – and go finish your Pepsi while you wait. Once the fudge has set, cut it into squares or fun shapes and sprinkle confectioners’ sugar lightly over the top for a snowy effect. Share it at room temp.

3 cups white chocolate chips
1/2 tsp peppermint extract
4 candy canes, crushed
Make it:
Line an 8x8 inch pan with parchment paper. Add the white chocolate to a big, microwave-safe bowl and cover with plastic wrap. Just like you did for the fudge, microwave for a minute and remove the bowl to stir the mixture. Microwave for 30 seconds and remove the bowl to stir. Continue to microwave and stir every 30 seconds until the mixture is fully melted and smooth when stirring – likely about five minutes.
Add a splash of Pepsi as well as the peppermint extract and stir once more until blended. Pour your mixture into the pan and use a spatula to smooth the top. Sprinkle the crushed candy canes across the top of the mixture and press them down lightly with your hand to set in place. Put in the refrigerator to cool for about two hours – don’t forget to finish your Pepsi! After the bark has cooled, break it into manageable pieces for a rugged look. Enjoy at room temp.
