Quick Pepsi Super Bowl Recipe: Pepsi Party Mix

Pepsi Party Mix in white bowls

This year, most of us will be tailgating and cheering on our favorite team from the comfort of our own homes.

Welcome back to our Carolina Kitchen, where we share simple, seasonal and sometimes sporty dishes and Pepsi recipes – like our Pepsi Peppermint Bark and our Back Home Burgers with Pepsi Ketchup. Looking ahead, we all need something we can quickly prep before kickoff. Enter: Our Pepsi Party Mix for a salty, crunchy, game-ready snack.

Pepsi Party Mix

Ingredients

1/2 c. corn syrup

1 tsp. baking soda

1 c. sugar

1 tsp. Pepsi

1/2 c. butter

1 1/2 c. Nut Harvest Mixed Nuts

½ lb. Rold Gold Tiny Twists

1/2 c. crushed Fritos

5 c. Life Cereal

Make It

In a glass mixing bowl covered with plastic wrap, melt the butter in the microwave. Stir in the sugar and corn syrup. Cover and microwave until boiling – it should take about two minutes. Boil for two more minutes, stirring every 30 seconds. Stir in the baking soda and Pepsi. Add the remaining ingredients to a large mixing bowl and pour the butter/syrup mixture over it while slowly stirring. Be careful not to overstir! Pour this final mixture across two or more baking sheets to cool. Break it up into smaller pieces as needed to serve.
